It's a magical, earthy experience to walk into your backyard and see fresh veggies growing everywhere!

My hubby is on his way to becoming an exceptional urban farmer. And I couldn't be happier with his new hobby! He's growing all his plants from heirloom seeds, with an elaborate lighting system in our garage. He then plants them in the garden based on their specific sun and soil needs; you should see his diagram and soil logs!

All his planning and hard work created a culinary explosion of fresh, delicious vegetables. The tomatoes, cucumbers, peppers, potatoes, tomatillos, and basil varieties are all exceptional, and I've loved every bite. He's even managed to increase the number of bees inhabiting our backyard and hasn't had to resort to manual pollination like last year!

Spicy Thai Purple Podded Yard Long Beans Ready To Serve

My biggest surprise this year is his Thai Purple Podded Yard Long Beans. First of all, they're giant and so delicious! They resemble small garden snakes! I checked out a few recipes, but none of them sounded very interesting, so I experimented and created my own. And no worries if you don't have any Thai Purple Podded Yard Long Beans, this recipe is delicious with fresh green beans too! 




Spicy Thai Purple Podded Yard Long Beans Recipe

Ingredients

  • 2 lbs fresh, washed Thai Purple Podded Yard Long Beans

  • Two tablespoons olive oil

  • One tablespoon dried red pepper flakes (reduce or omit based on your heat preferences

  • One teaspoon granulated garlic

  • Sea salt to taste

Directions

  1. Wash and remove stems from Thai Purple Podded Yard Long Beans

  2. Cut Thai Purple Podded Yard Long Beans into 3" - 4" pieces.

  3. Place your skillet on the stove with medium to high heat. Add olive oil for about 2 minutes and heat until hot.

  4. Add dried pepper flakes, granulated garlic, and sea salt to hot olive oil for about 1 minute. (Turn on your stove fan to help confine the pepper aroma)

  5. Add Thai Purple Podded Yard Long Beans to skillet, cover and cook for 5 - 10 minutes until they reach your preferred tenderness. 

  6. Serve hot with rice, chicken, seafood, etc. Perfect for meal prep efforts.
