Molé Mama's Sonora Beef Enchiladas


  • 2 lbs. lean ground beef
  • ½ onion finely chopped
  • 3 gloves of fresh garlic
  • Salt and pepper to taste
  • ½ cup warm water
  • ½ lb. grated Monterey jack cheese
  • ½ lb. grated mild cheddar cheese
  • 1 -  32 oz. can of Mild Las Palmas sauce
  • 12 Guerrero flour tortillas

I’m convinced that there is no greater combination of cheese, beef, spicy sauce and flour tortillas then our Sonora beef enchiladas. They always have the same affect on me, one brief smell of them baking in the oven takes me home to my mother’s kitchen and I find myself smiling broadly as I reflect on fond memories of our enchiladas. I’m sure you have family recipes that transport you like a time machine to your family’s kitchen too!
