I’m convinced that there is no greater combination of cheese, beef, spicy sauce, and flour tortillas than our Sonora beef enchiladas. They always have the same effect on me, one brief smell of them baking in the oven takes me home to my mother’s kitchen, and I find myself smiling broadly as I reflect on fond memories of our enchiladas. I’m sure you have family recipes that transport you like a time machine to your family’s kitchen too!

My mother and I made thousands of these for family parties, fund-raisers, and holidays. If there was a special event in the fall or winter, someone always asked us to make our famous enchiladas and requested extras for the men, you’ll learn why in a moment.

Sonora Beef Enchiladas Recipe

Ingredients

  • 3 lbs. lean ground beef

  • 1 large onion, finely chopped

  • 8 cloves of fresh garlic

  • Salt and pepper to taste

  • 1 cup warm water

  • 1 lb. grated Monterey jack cheese

  • 1 lb. grated mild cheddar cheese

  • 1 - 32 oz. can of mild Las Palmas sauce

  • 1 cup of Mazola corn oil or Avocado oil

  • 30 flour tortillas (room temperature)

Directions

Step One: Cook hamburger

  1. Cook hamburger in a large frying pan and drain excess fat.

  2. Crush garlic in molcajete or garlic press

  3. Add crushed garlic, onions, salt, pepper, and 1 cup of water to the hamburger.

  4. Simmer for 20 minutes until the onion is tender.

Step Two: Prepare your enchilada assembly line.

  1. Place the following items next to each other on your counter, or work area: The cookie sheet needs to be in the center.

  2. Pour Las Palmas sauce into a large bowl.

  3. Pour hamburger into a large bowl.

  4. Combine cheeses in a large bowl.

  5. Place casserole dishes at the end of the assembly line.

Step Three: Assemble enchiladas

  1. Heat oil in a large frying pan (oil is ready to fry when the oil bubbles around a wooden spoon).

  2. With Tong #1, fry one tortilla in hot oil. Flip once, so it is fried briefly on both sides. Place on the #1 cookie sheet.

  3. With Tong #2, dip the tortilla in Las Palmas sauce.

  4. Remove from sauce and place on #2 cookie sheet.

  5. Place about ⅓ cup of hamburger in the tortilla with a large spoon. Add about ¼ shredded cheese. Roll and place in casserole dish.

  6. Once the casserole dish is full, cover it with cheese and cover it with tin foil.

  7. Bake at 350 degrees for 30 minutes until cheese is completely melted.

  8. Stores in refrigerator for about 5 days and perfect for freezing for about 2 months.
