I’m convinced that there is no greater combination of cheese, beef, spicy sauce and flour tortillas then our Sonora beef enchiladas. They always have the same affect on me, one brief smell of them baking in the oven takes me home to my mother’s kitchen and I find myself smiling broadly as I reflect on fond memories of our enchiladas. I’m sure you have family recipes that transport you like a time machine to your family’s kitchen too!
My mother and I made thousands of these for family parties, fund-raisers and holidays. If there was a special event in the fall or winter, some one always asked us to make our famous enchiladas, and requested extras for the men, you’ll learn why in a moment.
If there is a special man, or men in your life, trust me when I tell you that they will absolutely love these. Husbands, father-in-laws, uncles, sons, and friends go crazy for our enchiladas. Benefit from my years of enchilada drama and make extras and if there are leftovers have a raffle to keep the peace in your family!
