I recently received a box of my all-time favorite cheese, Cowgirl Creamery Mt Tam Artisan Organic cheese. I've been a Mt Tam groupie ever since my first bite more than a decade ago. It reminds me of the cheese my mama used to make for us during my childhood on our dairy farm. You can taste California and love in every bite. 

Trying to develop a fabulous spicy recipe to honor Mt Tam was way more challenging than I expected. I knew it's flavor paired with some of my favorite peppers, or chorizo would be a home run. But what I didn't realize was how it melted. It's triple cream luxurious texture melts when you heat it. Recipe after recipe and technique after technique left me with baking pans and skillets of dissolved, butter-like substance. And then I had to throw it out because I couldn't get it to return to its original texture after it cooled. It hurt me to waste it.

 I finally gave up my attempts to cook with it and instead decided to explore spicy pairings. The final recipe had to be easy, using real ingredients and complementing Mt Tam's outstanding flavor. 

And during my explorations, a winner soon emerged! Our magical spicy mango salsa paired with Mt Tam is real food perfection! Mangos' sweetness with their celebratory vibe, cilantro, jalapeños, serranos, fresh lime juice with triple cream deliciousness is completely next level for any salsa cheese lover! Molé Mama Spicy Mango Salsa Recipe

Tools

  • Cutting board

  • Knife

  • Bowl

  • Citrus Squeezer

  • Potato Peeler

  • Measuring cups

Ingredients

  • Five medium ripe mangos, peeled and diced

  • ⅛ cup finely diced purple onion

  • Two serrano peppers, finely diced

  • One jalapeño pepper,(all seeds removed) and finely diced

  • ½ bunch of cilantro finely diced

  • Two limes - juiced

  • Sea salt to taste

Directions

  • Place on the diced ingredients in a bowl, add the juice of the two limes and mix

  • Add sea salt to taste

  • Chill for at least one hour before serving.

  • Remove Mt Tam cheese from the refrigerator and let stand for 10 minutes

  • Slide cheese thinly, and place on crackers and top with spicy mango salsa

  • Best to use simple, plain crackers without herbs or heavy spices 

  • Spicy Mango Salsa best if stored in the refrigerator for up to 4 days.
