30 Minute Spicy Chicken Taquitos Recipe - Deliver Crunchy Happiness Via Rolled Tacos

Taquitos, also known as rolled tacos, provide tasty bites of Mexican food happiness! And if you top them with guacamole and mango salsa and turn on some salsa music, it's a fiesta!

They are easy to make and don't require cooking gymnastics magic or toothpicks to keep them rolled tightly in place. The hack is to heat your tortillas on a comal, get them warm and pliable and then they are super easy to fill and roll.

And when you fry them, you always start with the seam side (opening) down in the oil. I recently updated my recipe, and to my surprise, they're crunchier and less greasy. I switched from corn oil to avocado oil.

I've been trying more recipes with avocado oil recently because of how well it handles high heat and its full of health benefits.

Taquitos - Rolled Chicken Tacos Recipe

Ingredients

  • 2 Cups Cooked Shredded Chicken Warm Chicken (best to use chicken breasts, can make homemade by boiling with fresh chopped onion and diced garlic, salt, and pepper, can also use rotisserie chicken) or use mashed potatoes as an excellent vegetarian option. Complete recipe video.

  • 30 Large King Size Corn Tortillas

  • 1 cup Avocado oil or Corn Oil

  • 2 Fire Roasted Poblano Peppers

  • Optional

Directions

  1. Step 1 - Shredded chicken should be at least room temperature or warmer.

  2. Step 2 - Heat tortillas on comal, a couple at a time

  3. Step 3 Place warm tortillas on a plate, add one tablespoon to the middle of the tortilla, and spread in a line evenly, from one tortilla keeping the chicken distributed in a thick line. Roll the tortilla tightly, start with tucking on the side over the chicken and rolling. Make six rolled tacos. 

  4. Place the skillet on the stove on medium-high heat, add oil and heat. Take a wooden spoon and place it in the oil; as soon as you see little bubbles form around the spoon, it's ready for frying. 

  5. Fry for a couple of minutes, turning frequently and browning it all the way around.

  6. Place taquitos in a casserole dish lined with paper towels or parchment paper

  7. Serve taquitos warm topped with guacamole, salsa fresca, crema (sour cream), all three, or anything else you want to try. Make this recipe your own, and enjoy!

  8. Heat up in the oven. The microwave will make the tortillas soggy.
